Store Management- Learn the Menu , Recipes & Procedures to make all the products. Raw Materials used  for all F& B Items at Concessions & Coffee Tree. Par Stock Levels of all the Raw Materials. Vendors for all the Items & their delivery terms ( & trends). Making P.O. & placing the order to vendors,  Inwards & receiving. Keep a check for proper storage of Raw Materials.

 
F&B Sales- Train the team for the best selling techniques. Suggestive Selling. Up selling and monitor transaction time at Pos.

 
F&B Equipment Management- Proper management of eqipments is very important because If the Equipments are not maintained & Calibrated properly, the final product will be different than the standard recipe, that means it may result in variances in some raw materials. ( Eg. Coffee machine, Pop Corn Kettle)

 
Consistent Product Quality- Adherence to Standard recipe & Training of staff from time to time & their certification on coffee tree & Concessions. Equipment Maintenance & Cleaning. Best Quality of Raw materials to be used. Hygiene & Sanitation.
 
Food Cost- Control Food cost and everything that is to be wasted has to be recorded in the wastage registers & Wastage punched in the system.
 
COGS Analysis- After the COGS report is generated, the AM ( F&B) has to do the COGS analysis for : Variance Analysis- All the variances are to be explained & Suggest & implement processes & fixes to avoid repetition. Wastage Analysis: Wastages are to be at minimum levels, & have to be managed. Need to be very careful while ordering perishables, Analyze the sales trends, Update the par stock levels if required.    Indent for raw Materials below par stock levels. Order to Vendors for the raw materials required as per the projection for next month. Consult to the Par stock level Format.
 
Guest Concerns. Empower the team to replace or change the product ,if guest is not satisfied. Give the solutions to the guests & Take feed back. “Manager Means a lot to Guest” : Always keep yourself available to guests & Listen. Always thank Them to raise the issue & let you know. Daily Reports: Performance Report is to be reported daily at EOD. It has to be sent for the day & month Till Date. Weekly / Monthly Reports: COGS report:  Every Thursday, Physical Inventory Verification: Scan Copies of Inventory Sheet Signed by Store Keeper, AM (f&B) & Unit Head Scan Copies of COGS Sheet Signed by Store Keeper, AM (f&B) & Unit Head
 
Other Operations Responsibilities-  Starting the Shift Daily. Briefing  at the start of the shift. Follow up on the last day LOG. Take Round of Property : Be Ready to Welcome the Guests. Check for Pre Rush Preparation at CT  & Concessions. Daily Reporting: As per shift & Reporting matrix. Record LOG for the Day.
